One-pan cod, potatoes & green beans
Cod, roasted potatoes, green beans, and simple herbs and spices on one pan.
Cook30–34 min in the oven

Written from Jadon’s one-pan cod video, including the measured seasoning at 1:10 and cooking sequence at 1:35–4:07. Use Print recipe to keep these instructions.
Let’s make it.
- Heat the oven to 425°F. Line a sheet pan with parchment rated for that temperature. Cut the potato into 1-inch cubes and pat the thawed cod dry with paper towels.
- Mix the paprika, onion powder, garlic powder, Italian herbs, salt and pepper. This makes the seasoning for the whole tray.
- Lightly spray the potato cubes with avocado oil. Toss with about 2 teaspoons of the seasoning and spread on the tray. Roast for 20 minutes.
- While the potato cooks, lightly spray both sides of the cod and the green beans. Coat evenly with the seasoning; you do not have to use all of it.
- Turn the potatoes. Add the green beans and place the cod on top. Return to the oven for about 10–14 minutes, depending on the thickness of the fish.
- Check the cod with a food thermometer: it should reach 145°F in the thickest part. Check that the potatoes are tender, then serve the fish, beans and potatoes together.
Make it work for you
Use the seasoning across the whole tray, adding only enough to coat. Jadon uses avocado oil spray on the potatoes, fish and beans.
The detail that matters
Give the potatoes a head start. Adding the fish later lets the vegetables cook through without drying out the cod.
Use a food thermometer, not a photo, to check doneness. FoodSafety.gov temperature guidance. Refrigerate cooked rice promptly; reheat leftovers to 165°F.
